A Look in the Kitchen

Who are the faces behind the beautiful dishes? Why did they choose this profession and where do they get their inspiration from? In this section, we spotlight our kitchen brigade. This time it's the turn of our Head Chef Julian Kamp.

When and how did you realize you wanted to work in the kitchen?
"I had an interest in the kitchen from a young age, but there was another dream in between."

Can you tell us more about your background?
"I first started as a part-time assistant cook, which was the right motivation for me. After that, I grew in various companies, with ups and downs."

When are you satisfied with your work? What gives you energy and where do you get satisfaction from?
"I mainly get energy from others and satisfaction from a good day, moment, or longer period where everything goes super well."

What makes it enjoyable for you to work at Lumen/Bluefinger?
"Building a beautiful/good team, even outside the kitchen. There must be a connection between the different departments and I find it important to make the collaboration pleasant for everyone."

What are you proud of?
"Of myself, where I have come from. That has made me stronger, but also thanks to my lovely wife and children. The pride of being the chef of a beautiful company with a wonderful team is certainly something I am proud of."

In what areas would you like to further develop yourself?
"I would like to further develop in 'leading in a more efficient way' and in the field of patisserie."

What advice would you give to someone considering working in the kitchen or pursuing a culinary education?
"Only choose it if your heart truly lies in the kitchen. Try to develop yourself as much as possible by asking questions to other colleagues, both in the kitchen and beyond."


Julian's favorite…

  • Culinary destination: "In terms of country, it is definitely Italy! If I have to choose a restaurant, it's 't Nonnetje in Harderwijk."
  • Ingredient: "Favorite cuisine is Italian cuisine. My favorite dish is spaghetti vongole or just a delicious platter of oysters and my favorite ingredient is garlic."
  • Chef/example/inspiration: "Chef: Massimo Bottura & Michel van der Kroft. Example and inspiration I find difficult because there are so many, everyone can be a source of inspiration. Furthermore, I like to draw my inspiration from nature."
